In the heart of Maremma and on the slopes of Monte Amiata, the Salustri winery and vineyards extends itself. This is an area swept by the winds of the sea and where there is an ideal microclimate which as always allowed for organic farming. And it is exactly here that there have been three generations of the Family Salustri taking care of the cultivation of the vine and olive trees, producing quality wines and oils in accordance with the traditions of the Maremma.
The vineyards are situated at 400 meters above sea level on limestone and volcanic soils.
The grapes are monitored closely throughout the vegetative cycle and the clusters are selected carefully during harvest so that only the best grapes are vinified. Special attention is reserved to vineyards which are more than 70 years of age.
The clones of Sangiovese have been selected in the old vineyards of the estates with the collaboration of the University of Pisa and have been classified, by the University, as Salustri biotitype.
Extra virgin olive oil is made with selected olives (Leccine,Moraiole and Frantoiane). The olives are harvested by hand from the organic production method. The olive are pressed the same day they are collected, this make it possible to preserve the organoleptic qualities. The Salustri Azienda offers a friendly and welcoming atmosphere at the Il Mandorlo Farmhouse to those looking for a relaxing vacation.
Our recently remodeled apartments, which are all part of the original Borgo dating back to 1200, are located amidst beautiful gardens.

If you have time to visit only one winery go here. They have 5-6 rooms and they are in the wild of Tuscan landscape. They produce excellent olive oils. 3 different kind with different varieties. They have pig and produce their own meat products and very good Montecucco wine. You are sitting in the garden with lovely Tuscan view and tasting their products. It is great.
